GRAIN FREE MUFFINS FOR KIDS

Here is the deal….

If it were up to my kids, they would be eating sugary stuff day in, day out. Every morning its pretty much the same scenario. All ready for school and when it comes to breakfast, if it is something sweet, you will see big smiles but if its something savory one bite and rest will be left on the plate. Sometimes its pancakes, other times waffles and you know the rest.

The recipe was born out of bored looks from my kids. They were bored with bars, pancakes, waffles etc. So after dropping them off, I grabbed my coffee and laptop and started my internet search. After applying the food filters I stumbled upon some really nice recipes but I was always missing an ingredient here and there.

 

This particular recipe was inspired by Wellness Mama and after a few tweaks (since I didn’t have all the ingredients), I present to you gluten-free, dairy free, low sugar, Grain Free Muffins.

As this recipe does not call for a lot of sugar, it is a perfect treat dessert for kids on the spectrum.

These muffins are made of Coconut Flour.

Although I make it for my kids, but I usually enjoy it with my afternoon tea and since they are soo light you will definitely be reaching for a second one.

Light and airy, with a kick of cinnamon, these muffins are sure to bring lots of smiles in your house.

Coconut Flour Apple Muffins
Instructions
  1. Pre-Heat the oven to 375 F / 190 C.
  2. In a blender/food processor add all the ingredients and mix well.
  3. Spray or line 12 regular sized muffin pan with cupcake liners.
  4. Let the mixture sit for 5 minutes so that the coconut flour can absorb all the liquids and then pour into the muffin tin.
  5. Bake for 15-18 minutes.
  6. Muffins are done when a toothpick/ knife inserted, comes out clean.
  7. Enjoy!!!
Recipe Notes
  • Make sure that the Coconut Flour you buy is organic and the label states only 1 ingredient....."Organic Coconut Flour".
  • When buying Applesauce, make sure there is no added sugar to it and there are no nasty fillers.
  • The applesauce I used in the recipe had cinnamon in it. If your applesauce does not cinnamon and you like the flavor, add 1/2 tsp of cinnamon to the recipe.
  • The muffins do not rise a lot and have a denser, cake like texture but are more airy and light.
  • I always use the "If you Care" brand for lining my tray and I have never had any problems, can't say for other brands though.
  • I do not like super sweet muffins, but if you enjoy that, add another tbsp. of sweetener to the recipe.
  • For an extra indulgence add chocolate chips or nuts on top.
